Phil Carnegie

Inverlochy Castle / Torlundy / 1 Michelin Stern

Great British Chef Phil Carnegie

“Phil“ grew up on a farm in Alford, Aberdeenshire and started his career as a chef at the age of 17 with an apprenticeship in a small pub called Aberdeen’s Shelly Leigh’s Restaurant. Inspired by his mother's cooking skills, he defied every challenge and worked in several restaurants worth mentioning, such as “Waterwheel Inn”, “Lairhillock Inn” and, last but not least, Germany's prestigious “Villa Hammerschmiede”. After three years with Johannes King on Sylt, he returned home to Scotland, where he quickly became a star chef. We met him when he was head chef at the venerable Inverlochy Castle for more than eight years where he delighted gourmets and critics alike.

THE journey

Contribution

Phil's work piece traces his career and the sometimes rough path to becoming a star chef in the form of typical dishes. The Scot depicts the three phases of his craft development and his apprenticeship years in Germany in a monumental picture. He “serves” a total of eight different dishes - including fish & chips (pub), duck with red cabbage (Germany) and a fine dining menu (Scotland) - and invites you to linger a while.
